This fortress has been converted to a cheese maturing cellar and houses over a hundred thousand comté cheeses stacked high on wooden shelves. This is where the cheese made from our farm milk eventually ends up and spends 9-18 months maturing. It is possible to visit in small groups, you need to call them or the office de tourism in Pontarlier to make an appointment.
