The 22-storey A'DAM Tower used to be the Royal Dutch Shell oil company offices, but has had a makeover to become one of Amsterdam's biggest attractions. Take the trippy lift to the rooftop for awe-inspiring views in all directions, with a giant six-person swing that kicks out over the edge for those who have a head for heights (you're well secured and strapped in). The tower is also home to the swish bar and restaurant Ma'dam, and the upmarket Moon revolving restaurant on the 19th floor. There is also the basement Shelter nightclub and a hip hotel, Sir Adam. The tower has wheelchair access.

There have long been links between Russia and the Netherlands – Tsar Peter the Great learned shipbuilding here in 1697 – hence this branch of St Petersburg’s State Hermitage Museum. Blockbuster temporary exhibitions show works from the Hermitage's vast treasure trove, while the permanent Portrait Gallery of the Golden Age has formal group portraits of the 17th-century Dutch A-list; the Outsider Gallery also has temporary shows. I Amsterdam and Museum cards allow free entrance or a discount, depending on the exhibition. Admission includes a free audioguide; come before 11am to avoid the lengthiest queues. There's a pleasant cafe/restaurant inside the museum, as well as Dignita Hoftein in the garden. Flash photography isn't permitted. The building was formerly a retirement home (for 'elderly' women aged over 50!).

It's a moving experience to visit this museum, which traces Van Gogh's life and development via the world's largest collection of his work, both familiar paintings and wonderful little-known pieces. It's fascinating to see his work change from tentative beginnings to giddily bright sunflowers, and on to his frenzy of creative brilliance towards the end of his life. There are also paintings by contemporaries Gauguin, Toulouse-Lautrec, Monet and Bernard. While you can try your luck for tickets at the entrance, it's highly recommended to book online and choose a time slot to avoid missing out, as tickets can sell out a few days in advance. I Amsterdam cardholders must reserve online at the I Amsterdam website (www.iamsterdam.com). The museum gets packed and the best times to visit to try to avoid the crowds are before 11am and after 3pm.

Perched atop the entrance to the IJ Tunnel is this unmissable slanted-roof green-copper building, designed by Italian architect Renzo Piano and almost surrounded by water. Its rooftop square has great views and water- and wind-operated hands-on exhibits. Inside, everything is interactive, with four floors of investigative mayhem kids of all ages will enjoy. Experiment with lifting yourself up via a pulley, making bubbles, building structures, dividing light into colours, racing your shadow, watching a chain-reaction display and discovering the teenage mind.

Dating from the early 14th century, this enclosed former convent is a peaceful haven, with tiny houses and postage-stamp gardens around a well-kept courtyard off Gedempte Begijnensloot. Within the hof (courtyard) is the charming 1671 Begijnhof Kapel, and the Engelse Kerk, built around 1392. Also here is the Houten Huis, the Netherlands' oldest preserved wooden house, dating from around 1465. There’s another entrance to the Begijnhof near this structure: look for a wooden door on the Spui’s north side, east of the American Book Center. The Beguines, a Catholic order of unmarried or widowed women who cared for the elderly, lived a religious life without taking monastic vows. The last Beguine died in 1971.

Amsterdam's most famous museums cluster around this public square, which has that Amsterdam essential: a skateboard ramp, as well as a playground and ice-skating pond (in winter). Locals and tourists mill around, everyone picnics here when the weather warms up, and there are food and craft stalls on the third Sunday of the month. The space is also used for public concerts and special events.Museumplein was laid out to host the World Exhibition in 1883, but gained its lasting title only when the Rijksmuseum opened two years later. One of many facelifts raised a triangle of turf at the southern end, dubbed the 'ass's ear' for its shape; it's now a popular spot for sun worshippers. There's a large supermarket concealed below.

Open since the 1940s, Van Dobben has a cool diner feel, with white tiles and a siren-red ceiling. Traditional meaty Dutch fare is its forte: low-priced, finely sliced roast-beef sandwiches with mustard are an old-fashioned joy, or try the pekelvlees (akin to corned beef) or halfom (if you're keen on pekelvlees mixed with liver). The meat kroketten (croquettes) are up there with the best in town and are almost compulsory after a late-night Rembrandtplein booze-up. White-coated staff who've worked here for decades specialise in snappy banter.

It's been around a while, but super-luxe Jimmy Woo is still the go-to place for a crowd of beautiful young things. Big names like Pete Tong cut loose at Air, which has interiors – including a tiered dance floor – by Dutch designer Marcel Wanders. Despite the awesome setup and sound system, a night out at Air is not what it used to be due to high entry prices, unfriendly staff and a problematic card payment system.

Some 260 stalls fill the Albert Cuypmarkt, Amsterdam's largest and busiest market. Vendors loudly tout their array of gadgets, homewares, flowers, fruit, vegetables, herbs and spices. Many sell clothes and other goods, too, and they're often cheaper than anywhere else. Snack vendors tempt passers-by with raw-herring sandwiches, frites (fries), poffertjes (tiny Dutch pancakes dusted with icing sugar) and caramel syrup-filled stroopwafels. If you have room after all that, the surrounding area teems with cosy cafés (pubs) and restaurants.

Park

A private park for the wealthy until 1953, Vondelpark now occupies a special place in Amsterdam's heart. It's a magical escape, but also supplies a busy social scene, encompassing cycle ways, pristine lawns, ponds with swans, quaint cafes, footbridges and winding footpaths. On a sunny day, an open-air party atmosphere ensues when tourists, lovers, cyclists, in-line skaters, pram-pushing parents, cartwheeling children, football-kicking teenagers, spliff-sharing friends and champagne-swilling picnickers all come out to play.

Flowers are not treats, but essentials in Amsterdam. Ever since 1860, this famous flower market has been located at the spot where nurserymen and women, having sailed up the Amstel from their smallholdings, would moor their barges to sell their wares directly to customers. No longer floating (it's now perched on piles), the market has plenty of high-kitsch miniature clogs, fridge magnets and wooden tulips; it's also a good place to buy (real) tulips in season and bulbs year-round.
