We'll drive to our 12th-generation winery, Wich is not open to the public, in the gorgeous wine country of Chianti Classico DOCG Denomination of Controlled and Guaranteed Origin. Explore the farm with ours kinds pets like truffle dogs, cat, chickens and pig (prosciuttina) and winery whit the owner winemaker and learn about the history of this 12th-century artisanal winery. During the 3-hour session, we will prepare 2 dishes FRESH PASTA and TIRAMISÙ entirely from scratch, guided by chef Paola. We'll begin by sourcing ingredients, emphasizing seasonality and freshness. You will acquire the skills to roll, knead, and shape a variety of pasta forms, such as: Tagliatelle, tortellini, pappardelle, ravioli, cappelletti and tortelli. From this selection, we will choose two formats to create two courses along with their respective sauces. For this reason, it will be necessary to conduct a small briefing before going into the woods, a sacred place for truffle hunters. During the hunt, I will tell you about the truffle, the magic of its traditions, its history, mythology, and uses in the kitchen. You will learn how to recognize and distinguish a good truffle from other fake "truffles" of inferior quality. After the hunt, we will return home for a scheduled lunch or dinner, based on fresh, real truffles and served with our own wine and extra virgin olive oil. We will show you how to clean truffles and prepare typical truffle recipes, such as crostini al tartufo, tagliatelle al tartufo, and more.

Dopo aver visitato i crateri,con la nostra jeep faremo 2 km di fuoristrada per scoprire l'ultima grande eruzione che distrusse il vecchio centro turistico. Infine con lampade frontali fornite da noi visiteremo dei piccoli crateri all'interno (grotta) e una frattura che divide l'Etna in 2 parti. Connect with ancient Rome on this special access tour of the Colosseum Dungeons, Roman Forum and Cesar's Palace. During the visit we'll uncover the Colosseum's dark 2,000 year history and gain restricted access to sites only accessible with accredited guides. At the Colosseum we'll skip the long ticket lines and venture into the dungeons, a labyrinth of passages, elevators, and trap doors which were used to bring gladiators and animals up to the arena floor, shocking and thrilling the crowds. Next you'll walk in the same steps as emperors, gladiators and doomed prisoners on the arena floor. The arena floor is where the Colosseum's violent games took place, and gives you the perspective of gladiators, as well as a great opportunity for photos. In the Forum, we'll visit pagan temples and tombs, the house of the Vestal Virgins, the Senate house, and Julius Cesare's tomb, among other important ancient ruins. During this experience you'll be able to immerse yourself in my family long time history as Wine producer, visit our ancient cellar and partecipate to a "fior di latte" Mozzarella Workshop and gnocchi making. It will be my pleasure welcoming you with a cup of coffee before visiting our vineyard overlooking the village. The wine tasting will take place in our ancient cellar where we keep our organic Catalanesca white and Aglianico red wine produced from the grapes grown in our own vineyards. I will be pleased to explain the origin of our grapes, the methods of production and offer you white and red wine to try in combination with a selection of the organic goat cheese, salame, pancetta and coppa ham produced in our farm. Now it's time to make Mozzarella: we will show you how to make it and, equally importantly, we will eat and enjoy it all together. After making mozzarella, we will start to 'Mettere le mani in pasta', meaning we will be making gnocchi. In this way, you will have a typical dish called Gnocchi alla sorrentina with homemade fresh gnocchi and mozzarella. This experience also includes a pice of local dessert and limoncello.
