For this reason, it will be necessary to conduct a small briefing before going into the woods, a sacred place for truffle hunters. During the hunt, I will tell you about the truffle, the magic of its traditions, its history, mythology, and uses in the kitchen. You will learn how to recognize and distinguish a good truffle from other fake "truffles" of inferior quality. After the hunt, we will return home for a scheduled lunch or dinner, based on fresh, real truffles and served with our own wine and extra virgin olive oil. We will show you how to clean truffles and prepare typical truffle recipes, such as crostini al tartufo, tagliatelle al tartufo, and more.

We first will meet in my shop in Montelupo Fiorentino, opened for 20 years in a historical village known all over the world for its ceramic production. Montelupo is situated precisely in the middle of Pisa and Florence so it is easily reachable by train or by car in about a half-hour from both sides. It is a beautiful village and I hope you will love it as I do! From the shop we will go together to the factory where I will show you the cycle of production of Italian handmade pottery, telling you the history behind and explaining all the techniques. If you want, there is also the possibility to design and purchase something new that will be custom made for you by our artisans! After the factory, it will be your turn! We will go back to the shop where my father will be happy to teach you how to make your pottery piece. Don't worry if you never used a wheel, the course is funny and satisfying for everyone! We will roll it out by hand and with the pasta machine, making shapes for Cappellacci & Spaghetti, but not without a small aperitif with tomato and basil “bruschetta” and few glasses of Prosecco! It is already time to prepare another dough, the potatoes Gnocchi. Come in the kitchen and watch how do the sauces for gnocchi, spaghetti and cappellaci with ricotta and spinach. You will walk with me or one of my fellow team members through the main roads and the back streets of the picturesque old town. You will learn about the Mafia, its brutal violence and its business, as well as about the people who stood up against the power of the organised crime. We will stop in front of monuments, memorials and shops, each is connected with a particular aspect of our story. Sometimes a small detail, that seems unsignificant at first glance, has a story behind it that is worth to be told. An example: Addiopizzo stickers on the shops windows we will see along the walking tour. They belongs to shopkeepers who have said NO to the protection money! You will also have the chance to support them, just buying a gelato, some local products or a souvenir of Palermo.
