You’re going to live an exciting experience, with me, by acting like a real pizza chef for 2 hours. First of all you’ll learn how to make an authentic dough. You'll know about its story, the reason why in Naples the pizza-dough is so different from the others and I'll show you the best way to reach a high grade of hydration and elasticity. I know it’s quite an arduous task, but thanks to my supervision and advice, you’ll manage! After done a prototype of the dough, we’re going to use an already risen one, because it actually needs 12 hours to rise. But the real thing is that you’ll learn how to make it. We'll taste all the main ingredients with all products from our land, such as tomato, crocché, cheese mozzarella and olive oil. This step helps to understand how important is to use high quality products for good pizza. Then, we’ll learn how to cut the dough by using the oldest method as our ancestors used to. I’ll give you the ingredients to make an authentic Neapolitan pizza Margherita, the most popular one. You’ll learn to spread the dough, like a real pizza chef, and then you’ll bake it in the wood oven. The most exciting part is when your pizza is ready and you can finally eat it. In the mean while you’re eating your own pizza, I'll tell you all about the Neapolitan cuisine and the birth of the pizza.

I worked into a pizzeria for a long time and I've been working in the culinary field for 10 years. So long time! So I decided to travel around the world.

We had a great time learning how to make pizza. The experience was well paced and fun, and great value. We had starters, our own pizzas and a drink, as well as good company from other participants. Luigi was great!

Gigi was an awesome host and the class was a lot of fun. Pizza was obviously fantastic and it was cool to see the wood oven up close and take out our own perfectly cooked pizzas.

The pizza cooking course was great! It was a very fun experience. Not only did the hosts explain every step of making a pizza, they also took great care that we felt comfortable, being very hospitable whilst also being entertaining. I highly recommend you to take this experience!

Wow I don’t even know where to begin. This was the most amazing experience! We came to Naples to eat pizza and hopefully gain some pizza making skills as we make pizza at home regularly. If we hadn’t taken this class it would have been a huge loss for us. We gained so much knowledge from Riccardo it was priceless. He is an amazing funny patient teacher and chef. The pizza shop we had the class in was absolutely beautiful and the appetizers he served us during class were just good as was the pizza we made. We were actually able to make real Neapolitan pizza that tasted like what we had been eating in the shops all week. From all the knowledge we gained it will definitely improve the quality of the pizza we are making at home. We learned about things that affect the quality of the dough like humidity and the ph of the water. He even talked about the importance of the quality of the ingredients you put on your pizza. I also noticed Riccardo was starting a pasta making class after we were all finished and I’m sure that would have been just as awesome as the class we took. I wouldn’t hesitate to take any tour or class he has on air bnb. Please take this class it was worth every penny and then some!!!
