Što ćete raditi

After washing hands, greeting and introducing each other briefly, we’ll start with rinsing rice because it’ll take nearly 60 minutes to be cooked. In this process you’ll learn the best way to cook rice without using a rice-cooker. Secondly, we’ll make ‘dashi’ from scratch. We use ‘Makobu’ that is the same one used in Ryoteis and ‘Katsuo-bushi’ that contains a lot of ‘umami’. The ‘dashi’ is going to be used for ‘Nikujaga’, meat and vegetables simmered in sweetened soy source, and ‘Miso soup’. You’ll also try how to make ‘quick-made dashi’. After that you’ll learn how to make grilled salmon/yellowtail that are soaked before grilling in ‘saikyo-miso’ and soysource, called ‘miso yuuanji’, which makes it really tasty. We’ll use season’s vegetables such as, in spring, cucumber, cabbage and broad beans. When we dish up all the food, we are ready to go ‘Itadakimasu’. Hope you enjoy the meal and conversation with other participants. It’s not an obligation, but helping ‘clean up’ is really appreciated. I’m a Japanese housewife with 20-year old twins. I’ve been practicing making Japanese food for my family for a lon time and two years ago, I decided to learn how to make traditional Japanese cuisine at Tsuji culinary school in Kunitachi, Tokyo. After graduation, I’m still practicing cooking at a Japanese Kappo in Kagurazaka. I’d like to share how it’s wonderful to make Japanese style dishes like Sushi, Tempura, Miso-soup, Steamed rice, Pickled vegetables that are healthy and delicious with foreign people who come to visit Japan.

The kitchen that is going to be used is the residential area in Kitasando that is located between Meiji-Jingu and Shinjuku-Gyoen and both spots have huge gardens and lots of old giant trees.
