Što ćete raditi

In this hands on workshop you will learn the basics of fresh cheese making, and leave ready to try out making a few fresh cheeses at home. These fresh cheeses do not require special equipment, nor an aging room so you truly can make them on your own after the workshop. I provide all the materials you need for the day, including a little recipe booklet you can take notes on so that you have the information you need when you leave. We will meet at the farmhouse for a quick overview and greeting before heading over to see the cows. After we leave the girls and return to the farmhouse, we will start making fresh cheese with some ultra fresh milk! We will focus on learning two basic fresh cheeses that you can make at home: French Coulommiers and Sérac (a ricotta-like cheese from the Alps). You will participate actively (we all learn better by doing!) in adding the culture and rennet, cutting curd to release the whey, draining and salting the cheese. We will take a break around 10:00 for fresh pastries, coffee, tea, and hot chocolate while we discuss the principles of cheese making, understanding the different types of cheeses, and and any other questions you might have about cheese.

Benoit is the founder of St Benoit Creamery, a sustainable organic dairy business he ran for 14 years in the San Francisco Bay Area. He is from the French Alps where dairy is a huge part of the mountain lifestyle. Kristina began first making cheese as part of St Benoit development. She has a passion for education, having taught for 25 years and cooking professionally. She adores sharing her knowledge of farm life and local foods. We recently started Sierraville Micro Dairy, a home dairy with a small herd of Jersey/Swiss Brown cows and Sierraville Micro Kitchen, an organic French style kitchen.

We will have fresh French-style pastries and/or bread and hot beverages around 10AM while the cheese is resting.

I provide all the materials needed for the workshop (rennet, culture, milk, cheesecloth, colander, thermometer, etc.

We will visit the small dairy farm in the gorgeous Sierra Valley and then spend the rest of the time in the historic farmhouse.
