100% outdoor class! Noel - the chef of El Refugio Mezcaleria - teaches this class. You'll start off with a brief introduction to the Mexican kitchen before launching into the cooking. We'll make 2 salsas: a salsa verde - to be used as an enhancer for any dish you make, from fish to pork to veggie tacos - and a type of smooth guacamole salsa used in taquerias. Then you'll make a mole verde - another speciality from Guerrero, that can be served with chicken, pork, beef, or even vegetarian plates.
Along the way you'll learn a lot of native Mexican philosophy as it applies to the kitchen (and life), as well as Mexican history and gastronomia.
This is a hands-on class and everyone will be participating. At the end you'll eat what you've made and enjoy a shot of artisanal mezcal or a beer.

My husband, Noel, and I have been running a very successful restaurant since 2016, serving prehispanic and traditional Mexican cuisine and mezcal. Noel learned to cook from his mother in Guerrero and began cooking professionally in 2014. As a native Aztec dancer, storyteller, and cosmologist, he brings enormous authenticity (and a lot of humor!) to his classes. I manage the restaurant and write about food and culture. We appreciated our time with Noel and the cooking class was a nice introduction to native Mexican cuisine in a very casual, informal setting. Think interactive luncheon with cooking demonstrations and a bit of audience participation, where groups prepare dishes communally and get to enjoy what you prepare as you go. It’s a great cultural experience to pull you out of the tourist bubble and give you a small taste of the real Mexico.

We took Noel's cooking class in a magical backyard, outdoor kitchen, where we were treated to his superb storytelling and the most amazing smells and tastes! Noel and Edna taught us to make tomatillo salsa, nopal salad, and a mole that ended up being our favorite meal in Los Cabos. This experience was unforgettable in all the best ways! Highly recommend!
