Nonantola (Campazzo) in The province of Modena,(Maranello FERRARI CAR -20 min) about half an hour in the Northwest of Bologna,(DUCATI MOTORBIKE,35 min, LAMBORGHINI CAR 10 min) is the only and exclusive area in the world where Aceto Balsamico Tradizionale di Modena (ABTM D.O.P.) is produced, a traditional Emilian cuisine made with Cooked grape must, naturally fermented and vinegarizated, nothing is added and then aged for at least twelve(12) years or Twenty five (25) and until fifty years or more. You will be immersed in a tasting experience (10 different kinds of aged vinegar) and understanding of the aging process of this Masterpiece of Italian culinary tradition. On Request IN ADVANCE (2 days at least) at the end of the visit you could taste the flavours of traditional balsamic vinegar of Modena in typical dishes (crescentine, prosciutto, salame, formaggio, Parmigiano Reggiano, vino, frittata, fragole, caffè, liquore) and you could buy a Giugiaro bottle of 100 ml of 12 or 25 years old vinegar, both at a special price
Other things to note
The aging process requires cold temperatures in winter and hot in summer so be prepared with the appropriate equipment. Don't forget the photo/video camera.

15 km from Modena/35km from Bologna; with Google maps it's easy to reach me.when You'll be at 150mt from my place you'l find 2 small roads. keep your right hand side, the small road with trees and after 150 mt you'll be in front of my gate. After parking the visitors can enjoy the visit the place where I keep my barrels for my aged Balsamic Vinegar(Acetaia), located 20mt from the main building.... and start to enjoy Balsamic Vinegar......

Guido was an amazing host!! He taught us so much about something that he's clearly passionate about. The balsamic vinegar we tasted was delicious and he was very generous with tastes throughout the tour. We LOVED this experience and can't recommend it enough.

I do not easily give five stars because I think they should be reserved for truly exceptional things. This is one of those things. This experience will help you understand the heart and soul of Emilia and its slow foods. Guido did an incredible job conveying the importance of this product, as well as the heart and love that go into making it. The property is so charming, and Guido is incredibly welcoming, friendly, knowledgeable, and passionate. You will taste so many things, laugh, learn, and walk away feeling humbled by this art. This is an exceptional value and just a beautiful and special experience. Your taste buds and heart will thank you!

Magical experience in the country with gracious host, Guido! You must go see his beautiful home, learn about traditional balsamic production and tasting, and warm hospitality. We loved the personal story and family history!

Great way to learn about balsamic vinegar tradicionale (the good stuff)! It was very delicious and it included Lambrusco! Guido is very accommodating and knows about the other items in the local cuisine too like parmigiano reggiano

We have had an amazing experience. Guido is a great storyteller and you can really feel the passion for his product. His hospitality is superb and he has setup his experience in a way so that it is good to follow and understand what is happening. You will definitely leave with your heart filled with balsamic vinegar! We highly recommend this. One of the highlights of our journey through Italy.

Guido is an enthousiastic, very kind and communicative host, who is passionate about traditional vinegar. The experiency was very educational and fun. Afterwords he cooked us a fantastic meal! My 18-year old son also enjoyed it very much
