Estaremos elaborando chocolate artesanal desde la semilla, utilizando cacao mexicano que proviene de familias productoras, que día con día trabajan para preservar la biodiversidad de cacaos mexicanos.

Conocerás la historia y el proceso de esta semilla, originaria de Mesoamérica, las diversas variedades que existen, las plantaciones, los sistemas agroforestales y la importancia de la biodiversidad, así como de los procesos postcosecha que se llevan a cabo por los productores.

También aprenderás el proceso de selección, tostado, descascarillado y molido artesanal que llevamos a cabo en La Rifa para elaborar chocolate. Te enseñaremos como elaborar tu propio chocolate desde casa para compartir con tus seres queridos. Prepárate para una experiencia llena de sabores, colores y texturas que inundan nuestro taller.

Mientras tanto, también disfrutarás de alguna de nuestras bebidas, que elaboramos a base de cacao, así como chocolates elaborados con distintas variedades de cacao.

Great experience for me and my kids.. We learned about chocolate and about Mexican history. And we got to make our own delicious chocolate! Daniel is an excellent host!

Monica was an amazing host! We loved loved loved getting to know more about the difference between fermented and washed chocolate and going through the tasting and chocolate making process with her. It was an incredible experience and we ended with some drinking chocolate which has become my personal new favorite way to drink it. Unfortunately there is no similar drink in San Francisco!

you will never taste chocolate the same way again. This is not about tempering chocolate to get a perfect shine, or encasing flavourful fillings with rich chocolate to make beautiful gifts - this experience is about gaining a deeper understanding of how chocolate is grown and processed artisanally. Mónica, our hostess, uses only three ingredients (cocoa beans, sugar and water) to teach you about artisanal chocolate making and the subtlety of flavour that bean preparation can produce. Co-owner of two chocolate fabriques, Mónica has nearly a decade of experience in making and selling chocolates. Her enthusiasm and passion for small family cocoa bean growers is contagious. During the two hour session you will taste, winnow, grind and hand mould your own unique single-farm, single-variety chocolates. The session ends with a tasting of Mexican hot chocolate allowing you to try your hand at using a molinillo.

Super fun experience! We learned a lot about chocolate and enjoyed Monica's passionate explanations. Loved the focus on sustainability and hearing about their personal relationships with the farmers. You'll never want to eat crappy chocolate again!

Very informative class about the cacao in all its aspect and of course deliciouuuuuus chocolate. You could see Daniel is a chocolate lover and really wants to promote chocolate in a way that is faithful to the Mexican culture but also as unprocessed as possible.
