I have been involved with craft baking for over 40 years and have been teaching courses for nearly 20. I am also a consultant in traditional baking and an agent for French wood-fired ovens in Britain. I have always enjoyed teaching my craft, and now I see it as a worthy duty given that the craft itself faces extinction unless others are persuaded to turn the clock back to allow time for fermentation and the proper handling of dough.

We'll be on the grounds of a traditional water mill near Shaftesbury, Dorset. It is one of the most tranquil places you could wish to learn about real bread. Indeed, most of the organic bread flour we will use in the course will have been milled some weeks earlier using French-style mill stones. While you're in the area, you may also like to visit Gold Hill, from the old Hovis TV ad, and the many National Trust properties in Dorset and Wiltshire.
