Join me for a night in Spain during a hands on paella cooking class learning how to make a seafood paella (we can accommodate allergies and other dietary restrictions, please just let us know in advance) and two tapas: tortilla de patatas and setas al ajillo (two staples of Spanish cuisine).
My Paella class class is inspired by Dorita Jáuregui, an amazingly good cook that I had the good fortune to meet about 35 years ago and I consider to be almost a second mother. I have cooked hundreds of paellas over the years and I still get very excited each time I make it. The process is deliberate but relaxed, inviting to cook mindfully enjoying how every step fills the kitchen with new, wonderful aromas.
During this Spanish food class everyone will be working on the Tapas and Paella and afterwards, we will sit down to share our meal.
Beginning with the tapas, participants will get an introduction to knife skills and other culinary basics - sweating vegetables, infusing oils with garlic, using salt in cooking, and others - which can be used throughout your other cooking adventures.
As we cook, I will explain the intricacies of making a paella, talk about the rice used and the appropriate spices. While learning to make this dish I will give you a plethora of information that will expand your toolset in the kitchen.
