You will experience making 2 different types of kimchi. traditional style and one extra for seasonal friendly style of kimchi. 1. Summer time, i tend to use water kimchi that i can use the broth to make a simple noodle dish. yummy. Summer time, i often make them with either cucumber, chive, White radish, and water-kimchi. kimchi can be spicy for some and it can be catered to your taste. 2. Winter time, i tend to use lots of fermented prawn or seafood sauce to make it longer to keep the veggies to keep fresh in fridge. kimchi is fermented vegetable that is signature dish in korea. what you are going to experience is to make a traditional style of kimchi that you can easily find at supermarket on fermented foods section. For Vegetarian or Vegan, i will show you how the Buddhist monk at Temple in Korea, make their kimchi , *****without adding seafood sauce or fermented prawn.*****

I have been a chef for nearly 20 years as a professional area since i moved here to Brisbane , Australia 2000. I used to live in European countries for 4 years as a cook and got a unique experiences and perspective on fine dining and every eatery . My family in Korea has a big responsibility for preparing a traditional family feasts for ancestor monthly. kimchi making is a huge part of me as i was a kid,watching my mom prepared making them tons of them. I hated them as a kid but loved at the same time and now i am able to produce more than 10 different kimchi that will give a unique experience. I will show you seasonal different menu depends on what is available in season. Summer time, i will show you how to make a MUl-kimchi and Baek-kimchi that is very watery and plain kimchi that goes very well with Roast meat, with fresh veggies.
